A crumble topping with oat bran adds a little healthy fiber to the crispy topping.
Pumpkin Crumble
makes one deep dish pie
(Or, pie-sized baking dish)
1 15 oz can pumpkin
1 14 oz can sweetened condensed milk
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground clove
1/2 teaspoon fine sea salt
1 heaping Tablespoon candied orange peel, ground
a little pinch of black pepper
Crumble Topping
1/2 cup flour
1/4-1/2 cup oat bran
1/2 cup sugar
1/4-1/2 cup butter or light and fruity olive oil
Preheat oven to 350 degrees F.
Combine crumble topping ingredients and stir. Add only enough butter to make crumbs stick together. Set aside.
In a mixing bowl, combine all remaining ingredients and blend well. Pour into buttered deep dish pie dish or round baking dish. Add pumpkin. Crumble topping over the top. Bake at 350 degrees for 55-60 minutes.
Serve warm with a small scoop of ice cream or whipped cream.
