Dried Fruit And Nut Bars

Blondie… meet fruit and nuts.

Cranberry Nut Bars
makes one 8×8 inch baking dish

1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 cup butter, soft
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup walnuts
1 cup pistachios
1 cup dried cranberries
1/2 cup pine nuts, to scatter on top

Preheat oven to 350 degrees F.

Sift flour, baking powder, baking soda, and salt in a small bowl.  Set aside.  In a large bowl, cream butter and sugar.  Add egg and vanilla.  Combine well.  Add flour mixture, nuts and dried cranberries.  Stir to combine.  Pour into buttered 8×8 inch baking dish and smooth the top.  Sprinkle pine nuts over the top.  Bake at 350 degrees F for 35-38 minutes.

Remove from the oven and let cool.  Then, cut into squares or bars.
